In part one of this week’s Three Course Meal, we learned about chef Tim Love’s inspiration for his Love Shack burger joint, along with a secret, off-menu item he likes to order when he’s in the mood for one of his burgers. Tomorrow, we’ll give you the lowdown on the new Denton location and our thoughts on the Dirty Love Burger.

Today, we share a recipe for grilled pickles that are only available at Love Shack’s Denton location. If you think these sound like a great accompaniment for all the summer barbecues right around the corner, you’re right: I sampled them at the new Denton location and they are rocking good.

Tim Love’s Grilled Pickles
 Serves 4.

Ingredients 4 whole firm cucumbers
 2 cups white vinegar
 2 tablespoons pickling spice
 1 piece of cheesecloth
 1 serrano chili
 Peanut oil
 Salt and pepper

Directions Heat a charcoal grill to 450 degrees. Cut the cucumbers into spears, leaving seed and skin intact. Use the cheesecloth to make a bouquet of the pickling spice. Place bouquet in a large bowl and add vinegar. Oil cucumbers with peanut oil and season with salt and pepper. Place on hot grill for 45 seconds per side. Place cucumbers in bowl with vinegar and cover with plastic wrap. Let the cucumbers pickle for 1 hour. Remove and seal in mason jars or serve immediately.
