From Craig Collins, the majority owner of Red Hot & Blue, comes Nazca, a South American concept opening this Friday. Located in the same plaza as Crossroads Diner at the intersection of Central Expressway and Walnut Hill Lane the new restaurant offers South American comfort food — kinda.
There’s ceviche, Argentinian-style hanger steak and a roasted chicken finished with a rocoto pepper sauce, but from there the menu dances all over the globe.
Grilled cheese makes use of halloumi from Greece. There’s hummus on the menu, which also hails from the Middle East, though it’s flavored with aji amarillo, a South American chili.
The rest of the menu follows this same tack. The dishes aren’t authentic South American cooking. Instead they’re American plates (burgers, sandwiches, salads and the like) with one or two ingredients or influences from South America cultures.
