His classic American food philosophy made Dakota’s a favorite for years (and suggests success for his own new restaurant, Sevy’s). Severson was also the brain behind the ever-popular Farmers Market Cooking Classes, a series of demonstration classes by Dallas’ top chefs using seasonal produce from the market and presented by the American Institute of Wine and Food, co-sponsored by Farmers Market Friends. Classes are held on Saturdays at the Market Resource Center, and the cost includes lunch, prepared by some of Dallas’ top toques.
