There’s a new and affordable way for interested eaters to experience the Culinary Institute of America’s San Antonio campus.
The school’s bakery, its first retail operation, was tentatively scheduled to open this week – although staffers were still experimenting with how to best position pastries in the display case when I stopped by the store on Wednesday. A grand opening’s set for March 5.
Like the rest of the 30,000 square-foot campus, the bakery has a sleek, sophisticated look, and will draw from pan-Latin and European traditions alike. Customers will have their pick of meringue or madeleines to accompany their espressos.
But a press release suggests the real attraction’s the scenery:

“Complete with a large picture window, the CIA Bakery Café overlooks the college’s teaching kitchen and allows guests to watch both our students as well as food enthusiasts in action,” the release enthuses.
According to a school spokesperson, the San Antonio campus plans to delve deeper into food service with a sit-down Latin restaurant this fall.
