Matt McCallister, who helped inaugurate the extraordinarily popular Fuego concept at Stephan Pyles before tendering his resignation there, has announced a series of three limited-seating dinners.

McCallister is planning to depart Dallas for a series of culinary apprenticeships at three of the nation’s leading restaurants, but will first offer tasting dinners at The Second Floor and Salum. According to a press release, “Each dinner will be a collaboration of ideas and techniques shared between each chef and will include direct interaction between the chefs and guests.”

McCallister’s calling the new endeavor “Play.”

“I chose to launch Play with executive chef J. Chastain and chef/owner Abraham Salum because I admire their culinary expertise and respect them as talented individuals in the industry,” the release quotes him.

The event will be held at The Second Floor on January 14-15, and at Salum on March 3. Tickets are $125, with wine pairings available for an additional $50.
