Pear cocktails get a bad rap. Grey Goose Le Poire and Absolut Pear started a sick trend in which the poor fruit can’t win, because let’s face it, most drinks are doing it wrong. They use too much pear and not enough something else.
Luckily Matt Tanner, Pappas Bros. beverage concept manager, found a way to let the pear’s flavor shine without making it sparkle from too much sugar. One of the new cocktails on the menu at Pappas Bros., the Pear Cobbler, has enough sweetness to satisfy your palate with a bit of tart and spice to balance. Try your hand at this simple cobbler (sherry + fruit) cocktail or visit Pappas Bros. for one … or three.
Pappas Bros. Pear Cobbler
3 oz. Valdespino Manzanilla en Rama Sherry
1 oz. Pear syrup
½ oz. Lemon juice
Grapefruit peel
Cracked pepper
Pour sherry, rear syrup and lemon juice into a shaker and shake for 10-15 seconds. Strain into glass over ice. Garnish with a small grapefruit peel and fresh cracked pepper.
Pappas Bros. Pear Syrup
1 part pear puree
1 part granulated sugar
Combine purée and granulated sugar in a blender. Blend mixture on high for 1 minute until sugar is fully dissolved.
