One hundred seventy-five years ago today, a convention of elected delegates meeting at Washington-on-the-Brazos and adopted the Texas Declaration of Independence, officially establishing the Republic of Texas. Sure, we’re no longer an independent nation, but being a kick-ass state is just as cool. Celebrate Texas Independence Day at both Norma’s Café locations today (17721 N. Dallas Parkway, 1123 W. Davis St.) by digging in to one of three special Lone Star-themed dishes. There’s the Double Barrel Chili Dog, two beef hot dogs on Texas toast smothered in chili, cheese and onions, or you can risk having a heart attack by ordering the chicken-fried steak with a “San Jacinto Upgrade,” a generous helping of chili, cheese and jalapeños. Since that whole war with Mexico is long forgotten, Norma’s is also offering the Texican Platter, three brisket tacos topped with cilantro and onions and served with two sides. Make sure you leave room for dessert because a slice of pecan pie is only 99 cents. That’s a deal that would make Stephen F. Austin proud.
