Smith is a local with a reputation that extends beyond our nation’s borders, to faraway kitchens in Paris and Ireland. He also ran the kitchen at Longview’s renowned Stock Pot (where he cooked for Julia Child and Jacques Pepin). He’s been teaching aspiring professionals the basics of classic cuisines for years at ICE in New York. Now he’s here to teach you some classic French dishes.
